Bisbrooke Artisans make high-quality organic sourdough bread. Founders Lance and Ami set up their micro-bakery in 2018, fuelled by a passion for creating authentic, satisfying sourdough.
They source ingredients locally, including flour from Whissendine Mill. Next, they apply carefully honed baking techniques to produce beautiful loaves. As Lance says: “The processes of self-fermentation, proofing, rounding, shaping and retarding the bread takes 31-36 hours. Only when these stages are right do we bake it. Knowing every stage has been done correctly is crucial.”
The care that goes into the baking, and the quality of ingredients used shine through. Bisbrooke Artisans’ loaves are not only some of the most beautiful you’ll find, but also some of the most delicious. They are satisfyingly flavoursome, employing herbs, spices and adjuncts such as caraway, turmeric, fennel, oats and charcoal (although their flagship Village Sourdough is a classic plain bake). In addition, the texture is finely balanced, hitting the sweet spot between supple and springy, and rustic and chewy.
