Carpe Diem Pizzas
Carpe Diem Pizzas is very much a family affair, with Lauren Davis, her partner Ben, mum Jackie and brother Robert all working together to serve up wonderful pizzas made using local ingredients.
Their beautifully appointed van Uno houses a giant wood-fired pizza oven and can be found regularly at The Vic in Hitchin and Cambridge County Polo Club, but do check out the website as Carpe Diem Pizzas do love to get around!
The team have a passion for great food, which shines through in their pizzas, including the wonderfully hot ‘The Fury’, made using homemade tomato sauce, fior di latte cheese, nduja and gorgonzola. Other delights include ‘The Gatsby Classic’, ‘The Jurassic’, ‘The Mushroom One’ and a sweet calzone called ‘Hapuna Matata’. And how about ‘Nobody Puts Bacon in the Corner’ –
a classic base topped with spinach, Wobbly Bottom Farm goats’ cheese and Carpe Diem homemade bourbon bacon jam?
While I waited for my pizza to be cooked to perfection, Robert, who has made as many as 350 pizzas in a single day, told me that he believes the key to making perfect pizza is cheese. Carpe Diem use fresh fior di latte as their mainstay, which is like mozzarella but slightly different.
I enjoyed Carpe Diem pizzas so much that I ate two on my visit to see them at Hitchin Beer Festival!
