You can find Donna Thomas on her regular stall at Thrapston and Higham Ferrers Farmers’ Markets, Northampton Local Producers’ Market and other local food events throughout the year, where her cakes and bakes receive lots of attention. Not only does everything she produces look tempting, but the flavours are often surprising – take Marmite flapjack, spicy cider fruit loaf and beetroot and lemon brownies.
Although unusual, these combinations work and reflect Donna’s interest in flavour and ingredients. Where possible, the ingredients are organic, Fairtrade and locally sourced (Glebe Farm organic oats, Kingsthorpe Farm eggs and Saxby’s Cider for example). Donna also uses seasonal, foraged ingredients, showcasing the fruits of Northamptonshire in the delicious form of summer puddings, oaty slices, cakes and more.
Donna uses cookbooks as inspiration rather than instruction, taking the knowledge acquired at catering college to develop her own recipes and flavour combinations. Tempting variations on brownies are usually available at the market and always available to order. Try chilli and lime, apple and caramel or peanut butter.
