Hatch has become one of St Albans’ great hospitality success stories. What began as a small takeaway hatch has grown into one of the city’s busiest independents. It was founded by Lussmanns alumnus Chris Evans, who is all about serving exceptional food without the formality. That philosophy still defines the experience today, whether you’re dropping in for a midweek coffee, a leisurely brunch or an evening meal.
The menu is packed with crowd-pleasers, but there’s genuine care behind every plate. Signature brunch dishes sit alongside indulgent loaded hash browns, inventive waffles and eggs in any form! The salmon and schmear is a particular favourite. Portions are generous, flavours are bold and presentation is polished without ever feeling pretentious. Also, head down in the evening for big burgers and small plates like gojang wings, schnitzel pieces or pork belly chichorons. Whatever time you go, you know the service will be friendly, unpretentious, but very efficient and professional.
Chris Evans has overseen Hatch’s evolution from a tiny neighbourhood concept into a thriving local brand while never losing sight of what made it successful in the first place: consistency, quality and genuine hospitality. The move to larger premises in Christopher Place has allowed the business to flourish, but it still feels proudly independent. They also have a walk-in branch at Smallford Farm Shop.
In a city blessed with excellent cafés and restaurants, Hatch continues to set the benchmark for relaxed, all-day dining that’s as welcoming as it is delicious.
