It was a delight to meet Phil Clayton, who for eight years has run Haxby Bakehouse and won many awards along the way. His bakery-deli is delightful – a treasure trove of jams and chutneys, baskets bursting with potatoes and stacked pyramids of butter. It also features a deli counter with a mouthwatering selection of local cheeses, hams and bacon. Haxby Bakehouse takes pride in the food that its Yorkshire neighbours are producing and wants to share it with everyone.
Phil is passionate about providing delicious bread and also shares his techniques through bakery classes. I am in love with sourdough bread and Phil enthusiastically shared his method for producing this slow-fermented loaf, which is baked in rough-looking globes and has a chewiness and a satisfying depth to it.
