Hicksons of Bassingham
Hickson’s Quality Foods of Bassingham is very much a family affair. Butchers since 1903, there are currently three generations working together in this traditional family business located in the busy Spar shop on Bassingham high street.
You will meet the family if you follow your nose through the stacked shelves and filled chillers, where aromas of freshly baked bread, cheese, cooked hams and bacon lead to a hive of activity at the back of the shop.
Ask any chef the key to good cooking and the answer is good ingredients. Hicksons makes it easy with skilfully butchered cuts of sustainably reared beef, lamb, outdoor-raised pork and game (when in season). Also on offer are flavoursome oven- and barbeque-ready kebabs, chicken, lamb and pork ‘pockets and parcels’ and marinated meats, plus a wide range of Lincolnshire sausages. Hicksons provides a hog roast service and pork pie tier cakes for parties, too.
The Hickson family is committed to supplying only the highest quality, full traceable British meat. “Tough standards, tender results,” says Rick Hickson, who, with his brother, can offer advice on using herbs, spices, and sauces as well as fresh ingredients on the shelves.
But it is not only about meat. Over on the deli counter Mrs Hickson prepares your choice of filled baguettes to take away. Warm sausage rolls, award winning pork pies, haslets, scotch eggs all made on site certainly make for difficult customer choices.
As does the selection of cheeses that have helped put Lincolnshire on the gourmet map. Vintage and oak-smoked Lincolnshire Poacher, Lincolnshire Red, Cote Hill Blue and Yellow ranges, and cheeses made at Lymn Bank Farm near Skegness, are joined by favourites from across the UK, including Black Bomber from Snowdonia, Cornish Yarg and Belton Farm’s Red Fox from Shropshire, along with the best Stiltons from Lincolnshire’s neighbouring counties.
