We’ve sampled Hogan’s ciders and perries on numerous occasions (at the CLA Game Fair and on tap at The Olive Branch, for example) and have always been impressed by their clean, balanced taste. This comes from the expert blending carried out by Allen Hogan (pictured) and his team, where they combine different varieties of their fermented juices to create the flavours they are looking for, with the ideal levels of acidity, sweetness, tannins and alcohol depending on their target brew.
Allen Hogan, based in Alcester, Warwickshire, has been fermenting apple and pear juice for 25 years. The fruit he sources is harvested during autumn in Herefordshire, Worcestershire and Gloucestershire and is washed before being pressed. “We expect to get over a pint of juice from every kilo of apples,” says Allen. Next the juice is fermented slowly, in cold conditions, for up to four months, before the dead yeast is removed and the young cider is then left to mature for several months. Then the expert blending takes place.

The quality of the apples and pears used, the slow fermentation and maturation methods employed, and the skilful combining of natural flavours has resulted in numerous awards for Hogan’s Cider. Allen’s brews are now enjoyed around the world including in the USA, Russia, Hong Kong and Australia.
