Northern Soul Grilled Cheese
Northern Soul Grilled Cheese sandwiches are the ultimate comfort food. When I first moved to Manchester, people would give me recommendations and I’d regularly find myself up against “…you WHAT?! You haven’t been to Northern Soul yet?!”
The heart and soul of every sandwich is its signature three-cheese blend, ‘The Soul’. This contains good-quality Cheddar for sharpness, gooey Gruyere for richness and depth of flavour, and trusty favourite, Mozzarella.
Classic creations include The Soul with caramelised red onion chutney / sliced tomatoes / roasted ham / Dijon mustard / a drizzle of pesto, etc. – but while sometimes you’re after simplicity, Northern Soul’s menu takes that traditional toasted sandwich to the next level.
For example, the ‘Salt ‘n’ Pepper Chicken’ is The Soul with crispy chicken (Northern Fried Chicken, not Southern Fried Chicken) with garlic, chilli and green peppers, finished with a sticky glaze. The ‘Rajun Cajun’ is The Soul plus Cajun-seasoned chicken, streaky bacon, tomatoes and a dollop of cheeky ‘Cajunnaise’. And ‘The Chilli Chorizo’ is The Soul with spicy Spanish chorizo sausage, black pudding crumbs, peppery rocket and sweet chilli jam.
However, my personal favourite is the ‘Mac Attack’ – an off-the-chain macaroni cheese IN A GRILLED SANDWICH. I’m not attempting a detailed description here – the Mac Attack is just utter filth. It was also my Northern Soul initiation at the famous Manchester Christmas markets, but outside of the festive season, you can find Northern Soul in the Northern Quarter or at Manchester Piccadilly.
