Ottar Chocolate are a team of small-batch chocolate makers and pastry chefs, producing their wares on the Welbeck Estate in north Nottinghamshire.
The team are dedicated to their art. They prioritise purity of ingredients, vibrancy of flavour and local, ethical sourcing above other concerns. “Ottar” is an essential oil you get from flowers, which gives you an idea of the kind of subtle, intriguing flavours these professionals work with. Products include a mouthwatering array of truffles and chocolates subtly infused with botanicals, plus creative baked items such as Mandarin Jelly Marshmallow Teacakes and stunning macarons. There’s also a range of small-batch nut butters and caramels, including Sweet Sea Salt & Fennel Caramel.
Ottar source their raw chocolate beans from Duffy of Lincolnshire (who get them directly from farmers) and roast them themselves. “We roast at quite cool temperatures to get a nutty, toasty aroma, and we test them often,” says founder and director Shelly Preston. “They’re only ready when they’re ready, and it takes patience.”
Shelly is an international-award-winning chocolatier whose background in product development in the natural beauty and wellbeing industry inspires Ottar’s lively and aromatic chocolate range. She’s passionate about natural perfumery and it shows. When she’s not working with the Ottar team, she tutors at the School of Artisan Food, which is located a stone’s throw from Ottar’s ‘chocolate factory’.
“We’re completely committed to the most ethical bean-to-bar chocolate and the finest, most flavoursome ingredients in our fresh chocolates and patisserie, no compromises,” says Shelly.
Ottar get unrefined brown sugar from Billingtons, coffee from Sundlaug Roastery (another Welbeck-based business), and sea salt from Maldon.
