The Happy Little Cake Company
The Happy Little Cake Company is a gluten-free bakery that designs and bakes bespoke cakes for birthdays, weddings, anniversaries and other celebrations. It also supplies gluten-free bakes to local coffee shops, tea rooms and restaurants.
Founded by Vicky Robertson – a baker determined not to let a diagnosis of coeliac disease get in the way of a passion for good food – The Happy Little Cake Company was a double finalist in the Carlsberg Northamptonshire Food & Drink Awards 2014 with its ‘Marathon Maker Muffin’. It was also a finalist in the National Cupcake Championships with a boozy ‘ChocoCocoNutty Malibu Cupcake’.
The Happy Little Cake Company has developed its own gluten-free flour blend and in early 2015 brought this to market along with a range of artisan baking mixes for home bakers under the brand name, Most Marvellous Baking. The range includes a flour blend, plus mixes for cakes, cookies, brownies, bread and pasta, and also gluten-free breakfast cereals. It is supported by recipes and baking tips online.
