The Rutland Charcuterie Company

The Rutland Charcuterie Company was founded by Nick Brake. Nick’s passion is for making British charcuterie with free-range meat sourced from local producers.

It was while living and working in France that he discovered the joys of charcuterie and on his return he trained at The School of Artisan Food before launching The Rutland Charcuterie Company. Nick and his dedicated team now specialise in making award-wining salamis and a range of air-dried meats including coppa and bresaola, selling at food festivals as well as to farm shops, delis and restaurants.

Great Food Club was particularly impressed with the perfectly spiced snacking salami – the ideal snack to enjoy with Grainstore beer in our opinion!

    The Rutland Charcuterie produces some of the best salami I have tasted (and I regularly eat various salami in northern Italy) – the prosciutto is superb, outstripped only by the salami. This is small-scale production at its best, and it’s just down the road. Great stuff!

    The garlic salami is wonderful! Second favourite is the fennel salami, such a great combination that I would never have imagined but it just goes so well together.

    You must try/buy before you die!!

    Tried the new snack salamis in the Blue Ball pub last week and they were amazing – went perfectly with the drinks. Have tried a lot of Nick’s range now and my favourites are the sliced smoked duck, the bacon that tastes how bacon should and the fennel salami, although everything is great.

    I can’t SHOUT OUT sufficiently about The Rutland Charcuterie Company, in Braunston, Rutland.

    Earlier in the year I sampled their fennel salami, made from British sourced pork, butchered and lovingly made and was instantly hooked.

    What is genius about this little sausage ‘over and above’ it being SERIOUSLY DELICIOUS, THE BEST I HAVE EVER EATEN, like all their produce, is that with the addition of fennel, it elevates it to an unbelievable level – fennel and salami work so incredibly well together, my first and last mouthful blew me away and I am salivating at the very thought of it now!

    No amount of words can describe the quality, flavour and delight of their produce, you really do have to try it to believe it. The underlying message from me is that there is no comparison nor contest in terms of quality and deliciousness between imported supermarket produce and locally, British sourced and produced salami.

    I first met Nick and his team in January this year at their stunning site in Braunston in the heart of Rutland, England. The aroma as I was welcomed at the door with a smile rendered me in charcuterie heaven, and to my delight, I was treated to a mini tour (but then I was working my magic on producing a new website for them)!

    The Rutland Charcuterie Company are a small, quality, award winning [BBC Good Food Show Bursary Award] business that produce British charcuterie in the heart of England, sourced from quality bred animals in the UK.

    Their passion shines through into their produce.

    What a shame there are only five stars – they should get more! I’m gradually working my way through the entire range and everything I try is sublime! The snacking salamis are such a fabulous idea and I’m hoping my local pubs (I’m in Essex) will get these in as they’re the perfect accompaniment to a good pint of ale. Their bacon is spectacularly good. Surely, this is what all pigs hope to be when they grow up? Highly recommended.

    Hearing Nick talk about his charcuterie is a real inspiration, the passion, the love, the care is all transferred into the products they make. Recently sampled the biltong, some snacking salamis and the garlic and caraway salami and they are all delicious.
