Yorkshire Fine Cheese
Yorkshire Fine Cheese is a small independent cheese maker that produces a soft, mould-ripened cheese called Barncliffe Brie. It is created using milk from the respected Bark House Farm herd of pure-bred Meuse-Rhine-Issel cattle, a continental breed that produces milk renowned for its cheese-making properties.
A desire to produce a soft cheese unique to its surroundings from the finest locally sourced milk led Danny and Carole Lockwood to form their own small cheese company. They collect the milk daily in a churn and take it the short journey into the tranquil valley below the farm to their dairy. They gently hand-stir the ingredients into the milk and when the time is right the curd is cut. It is then poured into individual moulds.
Barncliffe Brie develops its distinctive white coat whilst ripening in a temperature and humidity controlled room with a filtered fresh air system. It has a smooth texture with a rich golden centre and a unique flavour.
Barncliffe Brie is delicious baked in an ovenproof dish. Score the top, rub with a dash of oil and then drizzle with honey and scatter some thyme leaves on top. Bake for half an hour and eat with fresh bread! The cheese is available at selected delis and restaurants throughout Yorkshire and north Derbyshire.
