Callow Hall Hotel – Wildhive

Callow Hall Hotel is a beautifully refurbished Victorian country house set in 35 acres of glorious gardens and woodland. The style is classic-contemporary – modern design mixed with period décor in a traditional setting.

Dine in the open plan Garden Room with its stylish cocktail bar, decorated with statement art, and large ornamental olive trees. Floor to ceiling windows overlooking the rolling hills of Derbyshire evoke a wonderful calming atmosphere, which make it the perfect dining setting. There are private dining areas and quirky snug rooms for after dinner drinks, too.

On our visit, we enjoyed the cider-cured Scottish salmon starter and the roast sirloin of beef for main course. Dessert was rosemary panna cotta, which came with poached blackberries, damson jam and lavender shortbread. All of it was delicious. The chefs have a kitchen garden on site where they grow their own produce and their ethos is to buy local and British wherever possible.

After dinner we strolled through the lovely grounds and up to see the new woodland treehouses, which form part of their accommodation offer, they’re up a slight winding walkway but if you can’t manage this walk after a three-course meal and drinks, there’s a buggy service from the hotel!
