Harrison & Griffiths of Arnold, Nottingham are makers of Jamaican Rum Cake. It is typically a very dark, heavy cake but founders Paulette Griffiths and Colin Harrison have taken a family recipe and adapted it to produce a stunning, lighter, ginger-coloured cake while retaining all the taste and flavour of the original.
They run their business from home and have a dedicated bakery and stock/packing room on site.
Using the best ingredients including white overproof rum from Wray & Nephew, the moist cake is packed full of flavour. They make various strengths – a 1/4, 1/2 and full-strength cake which can be enjoyed cold or warm. The flavour improves over time – but we can’t imagine it will hang around for long.
