Dojima Sake Brewery
Think of sake, and you think of Japan. But you might not know that sake is also produced in Cambridgeshire at Dojima Sake Brewery within the Fordham Abbey estate.
Founded by Mr. Yoshihide Hashimoto, the sake produced here has its roots in Settsu Tonda in Kansai, Japan which has a 500-year history of producing sake. The authentic sake brewery is open for tours and visitors will get a rare glimpse into this often unseen process including seeing new batches being made in the fermentation room. The Fordham Abbey estate lies on land where Ice Age strata sit below the ground and this purifies the water – another factor that contributes to the success of the sake.
