Within the grounds of Wickham Hall in Bishop’s Stortford, you’ll find Bailey Hills Estates. This fabulous development from Eloise and Dylan Ford is crafting English Sparkling Wine from grape to bottle.

They first planted over 5000 vines in 2018 in three varieties: Pinot Noir, Pinot Meunier and Chardonnay. And as a result they now have two years of Classic Cuvée (2021 and 2022) and a Sparkling Rosé (2022).

With the English wine market on the rise, and East Anglia having a great combination of climate and soil; Bailey Hills is perfectly positioned to create something very special.

With their shiny new winery now open, Eloise and Dylan will be taking Bailey Hills to the next level. This is a top facility for wine production, but also for events, tastings and other wine-related experiences. Head Winemaker Sam Picton has bucket loads of enthusiasm and ambition to match!
