Hibiscus Fine Dining

Located in the elegant Billiard Room of Delapré Abbey, Hibiscus is a refined fine-dining restaurant led by Executive Head Chef Bart Polinski. This intimate, two-AA-rosette venue offers a seven-course tasting menu that evolves with the seasons and showcases the very best locally sourced produce – much of it grown by Bart himself in the abbey’s walled kitchen garden.

During our visit, standout dishes included a silky carrot cappuccino, a vibrant asparagus and ravioli creation, beautifully cooked lamb and a sharp-sweet rhubarb dessert. Each plate was thoughtfully composed and elegantly presented, complemented by warm, attentive service and perfectly matched wines. The view over the grounds and the historic setting only enhance the experience.

Bart, a former Northamptonshire Chef of the Year, brings creativity and precision to every course, creating a journey that balances flavour, texture and visual appeal. This is modern British fine dining with a real sense of place.
