New Buildings Brewery is the pride of Hinckley’s beer scene – the town’s first and only commercial brewery since 1900. It’s the brainchild of husband-and-wife team Darren and Louise Lavender, who also run two Hinckley real ale pubs: The Greyhound and The New Plough Inn.
Originally founded in 2013 by CAMRA members Tracy Ellis and Phil Woodward under the name Elliswood Brewery, the operation was taken over by Darren and Louise in 2016. Already experienced publicans and passionate about real ale, they kept the beers flowing while growing the brewery’s reach across the UK.
In 2020, they rebranded to New Buildings Brewery, scaling back the range and refining the recipes to produce an even better lineup of craft ales. Standouts include Windmill Best Bitter and Courthouse Porter.
You’ll often find New Buildings’ beers behind the bar at The Greyhound and The New Plough – two proper community pubs. The New Plough is beer focused, and The Greyhound serves honest, traditional pub food. The New Plough has even been named CAMRA Pub of the Year multiple times.
