Proto Artisan Bakery, Ware

Proto Artisan Bakery is the excellent creation of husband and wife duo James and Jo-Anne. Their journey began in Cheshunt in lockdown, baking sourdough for family and friends. But when that started to become really popular they put down roots and opened their first bricks and mortar café in Ware.

Four years on, the Ware branch continues to thrive, alongside its younger sibling in St Albans. Both branches are all about real sourdough and real craft. Their bread range includes organic, white, seeded, jalapeño-cheddar and olive sourdough. But it’s not just bread, it’s also amazing pastries such as sausage rolls and cinnamon knots, plus cookies and cakes. salt brownies, sandwiches and Detroit-style pizza.

Honestly the list of great items is fairly endless – and there’s no better phonecall than when my wife calls and says “I’ve just been to Proto”!
