PETER Pizzeria Leicester
PETER Pizzeria is a funky, laid-back and enjoyably individual restaurant. Its sister venue is located in Loughborough town centre. The premise behind PETER is that pizza as we know it in the UK is actually an American 1990s fast-food invention and that real Neapolitan pizza is something else entirely. PETER’s young Italian founders are on a mission to revive the good name of real Italian pizza.
And they’re doing a good job. All pizzas served at PETER are made from scratch and have a sourdough base that has been fermented for 28 hours before being shaped, topped and blasted in the restaurant’s hand-built oven for 90 seconds. The result is crusty on the outside, slightly sloppy on the inside and just a little charred. Gluten-free options are also available, as is calzone. The bases are made with flour from Caputo, described as “the world’s best pizza flour”.
But it’s not just about the sourdough. Toppings are first rate too, from the San Marzano tomatoes to the Mozzarella di Buffalo Campania. Local ingredients also feature, with sausages from Bill Cooling and desserts from Loughborough’s Chocolate Alchemy and Cafe 53.
The restaurant itself is a shrine to upcycling and wouldn’t look out of place in London’s Shoreditch, featuring recycled furniture and all sorts of inventive design touches.
You can also learn to make, stretch and throw dough in the traditional way like the chefs on one of PETER’s pizza-making classes.
Look out too for ‘PETE on the Street’, a truck towing a Peter-branded shipping container housing a wood-fired oven, which will cater for festivals and other events.
