Olivia’s Coffee and Bakery HQ is in Burton on the Wolds, Leicestershire. This branch is the factory shop attached to the main bakery.
Olivia’s is run by Jose Diaz, born in Colombia, but spent much of his early life in Spain. He studied in Madrid and became a pastry-chef in Michelin starred restaurants El Club Allard, Madrid and Lasarte, Barcelona.
In 2015 Jose moved to the UK, and not long after decided it was time to go out on his own. He launched his first shop in Loughborough in 2018. In 2021, it expanded, taking over the café at Outwoods Country Park in Charnwood. In 2023 the business was taking off and they had to expand their production into this much bigger facility in Burton on the Wolds.
Olivia’s bakes a range of breads including sourdough, bagels, focaccia, and farmhouse loaves. It also makes pastries and sweet treats from cinnamon buns to brownies.
But the name doesn’t come from Jose’s mother or wife, the name comes from a cat that he found behind a bin in Madrid. Jose rescued the cat, called her Olivia and she became the symbol of his business. Olivia the cat is now thriving, and the bakery is too!
